One of London's leading catering and events companies is looking for a Head Chef to join their team. The Head Chef will be working closely with the Executive Chef in running the kitchen, and will oversee the Executive Sous, three Sous Chefs, and the large brigade of freelance and agency Chefs. The kitchen is extremely busy, and in the run up to Christmas, they will be doing up to about 40,000 covers per week. The events that they do range from large and small corporate events, weddings, smaller private parties, as well as large parties at various venues around the capital.
The Head Chef will be responsible for running the kitchen, managing the team, and ensuring that the team spirit is kept alive. They will also be responsible for financial aspects, and will do the costings, ordering and menu design with the Head Chef. They will also ensure that the temperatures, recordings in the kitchen are all kept up to date and accurate. The Head Chef will also be cooking, and will work in all areas of the kitchen, as well as in the tastings. The Head Chef will be expected to go out on jobs, and run specific ones, where they will have organised the agency staff as well.
The right candidate will have had experience of working with volume, and will be able to manage large events without any problem. It doesn't matter if they have worked in restaurants, hotels, or events companies, but they will need to be able to handle high pressure. They will be organised, disciplined, and have a good team ethic. They will of course have a good understanding of flavours, cooking methods and techniques, and using the most up to date equipment in the kitchen.
Interview process: this will be a 4 stage interview, comprising of trade tests and more face to face formal interviews.
Salary: £50,000 to £55,000 gpa
Hours: mainly Monday to Friday, but weekends and evenings are required as necessary. Starts are at 07.30/08.00. Overtime will be taken as time in lieu
Holidays: 26 days per year plus bank holidays
