One of our clients has a job for a Head Chef in their busy central London restaurant. The restaurant is part of a larger group and it is extremely busy, doing around 2800 covers across the week. The restaurant is well known for its Middle Eastern and Northern African cuisine and the fresh ingredients that it uses.
The Head Chef is required to start as soon as possible, as the current Head Chef will be leaving in the New Year, but they would like a handover. The Head Chef will be responsible for the whole kitchen and will look after a team of sixteen Chefs and six Kitchen Porters. The duties will include:
recruitment of all Chefs
menu design and development in conjunction with the other Head Chefs in the group and the Group Executive Head Chef and the Group Executive Sous Chef
rota design and holiday cover
all the kitchen paperwork - including COSHH, H&S, FS etc.
management of sickness cover
The Head Chef will be required to cook and help out in the kitchen on a daily basis, and must be prepared to do this. The client does not want a hands-off Head Chef.
The Head Chef will need to have restaurant background, but this could be at Sous Chef level. They will be organised, well presented, able to work in an open plan kitchen, and be a good man manager. The Head Chef will be looking to grow within the role and will relish a challenge.
Hours: 7 shifts per week over 5 days. Shifts are 07.30-16.00 and 16.00-close (midnight latest)
Holidays: 28 days per year
