Greycoat Lumleys’ client is looking for a Junior Sous Chef for their 3 AA Rosette Restaurant by Loch Ness. This property is nestled in the heart of the Scottish Highlands and would a great opportunity for a rising Chef. They are looking for someone with potential who has flare and passion.

 

Duties would include:

Ensuring that all customers receive the highest level of attention, service and care

Supporting the high standard of dedication, expression and initiative to all dishes

Assisting with the control, receipt, storage and issue of supplies

Learning style, presentation and recipes to assist with food preparation

Working alone or in a team with tasks for pre, during or post meal service

Manage time to meet objectives

Listen learn and put into practise all aspects advised in training

Have a good understanding of how to prepare and cook meat and fish

Have a good understanding of how to use the indoor Green Egg and other equipment

Daily mis en place for the main dishes in both the Brasserie and Station Road

 

Required:

Must be able to self-manage

Be creative and have excellent attention to detail

Must have knowledge of the kitchen with room for development

Must have a mature professional attitude

Must be hands on and be a good communicator

Should be able to multi task

Should have relevant hygiene, health and safety training - basic hygiene certificate

Must be able to listen, take orders, directions and take criticism and be willing to learn

Comply and be aware of all HACCCP requirements

 

 

Hours: Straight or split shifts, 5 days a week, hours subject to business
