Sous chef for formal private household in Surrey.

 

A lovely role working with an experienced Head chef and Kitchen porter. You will be reporting to the head chef, but will also be in the kitchen on your own at times when the household is busy.

 

Duties will include:

  • Ensuring that all the clients’ food needs are met. This will include providing all daily meals, as well as any snacks and/or afternoon tea, canapes etc., as required.

  • Providing catering for staff on a daily basis, with the help of the sous chef

  • Daily menu planning (with or without input from the client), family style buffets mostly

  • Shopping, provisioning, stock control, supplier relations.

  • Maintaining high levels of cleanliness, hygiene and standards in the kitchen daily, so that they comply with health and safety, food safety, COSHH and HACCP regulations.

  • Catering for events, whether formal or informal.

  • Catering for specialist and preferred diets and dietary requirements.

  • Budgeting and accounting for the running of the kitchen, whilst also minimising wastage.

  • Organising and writing staff rotas

  • Staff management and training of the Chefs as required.

  • Maintaining supplier relationships, and ensuring that the best deal is reached, whilst maintaining the highest quality of ingredients and products.

  • 5 day week, days off depending on rota.

 

Start: ASAP

 

Salary: Around £40,000 - £45,000 gross (pro-rata)

Interviewing from 16th October onwards and starting immediately after this.
