Greycoat Lumleys are excited to be able to offer a Couple role with a difference. The Couple will live on the mainland in the Scottish Highlands and travel to work each day by ferry to the Island where the properties are. Accommodation is provided to a high standard and being part of the team on the Island is unique in being part of a special place for guests to visit. Guests can be visiting to get away from everything or from a charity, all guests are treated exceptionally well by the team, on first name terms and there is a sense of wellbeing and care - 'A Place for the Soul'.
The Couple can be a combination - the key is to find an experienced Chef and the second person to be in a Management role - Front of House - a Chef - Housekeeper. The estate consists of various properties and there are some new ones being added to the group. All guests eat together at meal times and there is a feeling of community.
The current staff are made up of local people, people from cities or towns who want to embrace the outdoor lifestyle, some longstanding.
The properties where guests stay have a rustic feel but are very high end with modern conveniences.
This is a long term role and the client is looking for long term commitment.
Duties for the Head Chef
Responsible (with other departments) for continuing to bring the Islands 'Vision' to life, with a large emphasis on the outdoor cooking aspect.
Responsible for delivery of all food on the island & running a kitchen of 4/5 staff (inc recruitment, training, mentoring, apprenticeships)
Responsible for menu design & development (seasonal, local), sourcing local suppliers, managing budgets, ordering etc
Responsible for delivery of all food for events & special occasions (inc yearly open day 1000 guests)
The estate catering for up to 30 guests at any one time.
Guests visits are managed and can be Monday to Friday or weekends
Accommodation: 3 Bedroom house on the mainland - pets welcome - not suitable for a family
Salary: £60,000 to £80,000 GPA + bills and council tax are paid for by the estate
