Sous Chef Live In or Live Out
Greycoat Lumleys’ client is a stunning boutique hotel in a coastal Highland town. They are looking for a Sous Chef for their intimate 3 AA Rosette restaurant. This is a superb opportunity to work in a privately owned hotel committed to developing their staff and with a very experienced management team. You will also get the chance to work with some of the best ingredients in Scotland and help push a restaurant which already has an excellent reputation towards more accolades.
Duties to include:-
Assist the Head Chef in creating menus and running service.
Managing the kitchen in the absence of the Head Chef.
Working alongside junior chefs, helping them to develop their skills.
Orders and stock rotation
Ensuring food safety and HAACP standards are kept
Minimising food wastage and maintaining GPs
Must have experience in a high end fine dining environment with a focus on local and seasonal produce. As it is a tight knit brigade the candidate must be an excellent team player and able to cover all sections. Must be able to comfortably run service in the absence of the Head Chef and maintain the high standard that is expected.
