Cleary's Winter Warming Mulled Wine

Our very own Natalie has very kindly disclosed her secret and very delicious mulled wine recipe. It’s a favourite among the office and we are happy to share this with you so that you will be able to impress everyone with your very own homemade mulled wine (no more of the shop bought stuff). Hope you enjoy it as much as we have! Merry Christmas!!!




• 1 orange, peel and juice
• 1 orange, sliced into small segments
• 200 g caster sugar (extra to taste if required)
• 6 whole cloves
• 1 cinnamon stick
• A few grates of nutmeg
• A little cinnamon
• 1 star anise
• 2 bottles red wine (Can be on the cheap side)

• Add the peel, orange juice, sugar, cinnamon, cloves, nutmeg into a thick bottom saucepan and cover with half a bottle of wine (make sure this does completely cover the sugar, if not add a little more wine).
• Gently heat this till it simmers. The sugar should completely dissolve into the red wine.
• Then bring to the boil. Keep on a rolling boil for around 4 minutes, or until you’ve got a beautiful thick syrup. This creates a base and allows the flavour of the spices to infuse into the wine.
• It’s important to make a syrup base first because it needs to be quite hot, and if you do this with both bottles of wine in there you’ll burn off the alcohol! (Heaven forbid).
• When your syrup is ready, turn the heat down to low and add the star anise, cassis and the rest of the wine. Gently heat the wine and after around 5 minutes, when it’s warm and delicious, ladle it into warm glasses to serve.
• Don’t forget to taste before you serve! As some people like to add a little more sugar or spices at this stage, for an extra kick.
• I like to out one small segment of orange into each glass for a splash of colour.
• For something different – you can also serve in tea cups and saucers and top up with a teapot!
