What Makes A Good Chef Candidate by Dan Arratoon

About the Consultant…

Name: Dan Arratoon

I was a qualified Chef myself and then later turned my hand to being a chef consultant at another agency.

How long have you been working at Greycoat Lumleys?
1 year!

What do you like best about your job?
I enjoy the people I work with and we have a great Corporate and Hospitality team here. I enjoy the job as a whole, it gives me a broader perspective of the industry.

Which four individuals, living or not, would you like to have a My Chef dinner party with?
Jack Nicolson, Will Farrell, Rebel Wilson, Elizabeth Banks

Are you a keen chef yourself and what is your signature dish?
I am, I like to cook with Lamb, Beef and Fish - fresh and trendy, very open.

About the Candidate…

What are the most important things you look for when receiving a Candidates CV?
How long they have stayed in their jobs, as it shows commitment, reliability and stability. I also look for how hard and demanding their role would have been.

When you first meet a Candidate; what is expected from the candidate to impress you?
Self-Pride in their appearance, how they carry themselves, clean hands, personal hygiene.

What key pieces of advice do you give to your candidates when they are going to an interview?
Be on time, dress well, speak clearly and politely, do not stray from the truth- be honest, don’t be afraid to talk, sit up straight make eye contact, sell yourself but don’t be too cocky.

If a candidate is yet to secure their first Sous chef or Chef de partie role through us, what advice would you give them in order to boost their CV or get their foot in the door?
On your CV, always highlight the points that they are looking for and expand on those points - these are the things that will get you noticed. If you don’t know what they are looking for, a good tactic is to put yourself in the interviewer’s position and ask yourself what would I be looking for in candidate;

• Length of time in a job or role
• Time keeping
• Responsibilities
• Did you train any colleagues
• Did you go above and beyond your duty
• Did you support the senior members in their absence
• Are you good with guest relations
• What is your future goal
