Perm Chef Job

A client of Greycoat Lumleys requires a live out Chef, in a fully staffed private household. You will be working in a private house mainly catering for two adults and two children (16 &19) who are home at the weekends and in the school holidays. On average one large dinner party per month, 5 courses for 18 guests plus weeknight meals and weekly kitchen suppers/Sunday lunches for family or guests up to about 8 people. Hours of Work You will predominantly work a late shift: Late 2pm-10pm (plus extra hours especially at weekends if needs be) Early Shift 6:30am – 2 30pm (mainly at weekends). The family enjoy a Sunday Lunch. 5 days per week with two days off (Usually Friday and Saturday or days off in lieu if you work more than 5 days). Working days to include weekends. On Early shifts the Chef is required to prepare breakfast, shop and provision for the day, prepare a light lunch, greet guests coming to the house for meetings and prepare a supper ready for the Butler to heat and serve that evening. Late shifts comprise of shopping, making teas/coffees for the Principal as required, preparing and serving supper, cleaning down and locking up the house. Supper is always 3 courses and all food in the house is plated and served. The Family have no stringent dietary requirements but enjoy a variety of cuisines with an emphasis on fresh produce, low/no carb and lots of flavour.  Making homemade ice creams, granitas and sorbets and healthy freezer meals that can be microwaved on your days off by the Butler and making sure there are snacks in the fridge is important. There is some provisioning of the house required in cooperation with the Butler and Housekeepers– stocking of the fridges, drinks and cleaning supplies. The house is immaculate and the kitchen must be kept immaculate also.  Cleanliness and a high attention to detail are as important as exceptional food preparation. Willingness to be flexible with hours/switch shifts/days based on the Family’s plans and muck in is important – plans frequently change last minute so being resourceful and adaptable is key. Perm Chef Job

A great opportunity for a Live In Chef to work between Hampshire and London. The family usually spend Wednesday to Friday in London and Saturdays to Tuesdays in Hampshire. You will predominantly cook for the Principals themselves or with their grown up children who also use the house’s, (three grown up children). The house has its busy periods where the principals are in residence a lot and entertain to then much quieter weeks when just cooking for two, flexibility is required. The property in Hampshire is a large old Tudor house which is situated in stunning 150 acres of land, ideal for someone who loves the rural setting but is also very close to large towns. They are looking for a Chef to join their existing team of Estate Manager, Housekeeper and a Groundsman. The client requires an excellent Chef who is able to cater for dinner parties up to 20 people when they entertain. They have a large kitchen garden and fruit trees for you to cook with so ideally someone who has an interest in cooking preserves and chutneys using the fresh produce. There is a great opportunity to be hands on in the kitchen garden and growing produce yourself. When the family are in residence you will cook breakfast, lunch and dinner, you will be responsible for shopping, menu planning. They like Ottolenghi, family style plating. They have 2 Labradors so you should be confident around dogs Accommodation Separate 1 bedroom cottage – and a basement apartment in London. Travel will be required to their property in South of France in Summer. Head Chef Job

Head Chef Job Greycoat Lumley's client are seeking a Head Chef for their Private Exclusive Use Lodge approximately 2 hours north of Inverness.  The a small rural community will suit if you enjoy being in a remote environment which has much to offer for the outdoor enthusiast.  There are local hotels, bars, a primary school, community hall, bakery, holiday accommodation as well as many visitor attractions and on the North Coast 500 route.  It is a great base for walking, hiking, mountaineering, cycling, wild water swimming and surfing. Key Head Chef Responsibilities Lead the team and manage the kitchen and the quality of food in line with high quality standards and procedures. Consistently deliver a high quality food experience for guests in line with the Client's ethos and concept. Design menus with produce within the budget allocation - balancing cost with value and quality. Engage with guests to educate, inform and enhance their experience on the food ethos and conservation and regeneration story. Effectively and conscientiously manage the Health, Safety and Environmental legal and policy requirements for the kitchen. Lead and contribute to the overall effective and efficient venue operations including stock and cost controls, resources and standards and effectively manage the supply chain. Consistently identify and design ways to engage and inspire guests, in particular to our Vision and Values. Be a positive contributor to the Team, the community and the wider enterprise.
