Head Chef Job

A fantastic opportunity has arisen to work in one of London’s oldest institutes. We are seeking a Head Chef to oversee two restaurants and 12 chefs. This exciting and unique opportunity allows you to have all bank holidays and school holidays off. This includes 6 weeks off in the summer and two weeks over Christmas. In total you will only be working 195 days throughout the year!

As well and exceptional holiday perks, 30 days holiday allowance, guaranteed bonuses, tronc, my client also pays a 21% pension contribution.

Across the restaurants, you will be responsible for Breakfast, Lunch and Dinner. Breakfast service up to 300 covers and lunch up to 600 covers. Dinner is significantly smaller. You will not be expected to work all services, but flexibility on working mornings or evenings is expected. This is Monday to Friday only.

Responsibilities:

  • To develop and plan 6-week Cycle menus with Spring, summer, Autumn & winter in mind themed days 1 a month that are in line with our customer expectations.

  • Fully responsible for the provision of seasonal food in a contemporary style in line with the food at highest standard.

  • To ensure our food is seasonal, of known provenance and where possible sourced locally.

  • To produce food in a timely fashion to ensure smooth service to our customers.

  • To ensure that all appropriate ingredients are available for the menus being prepared and where necessary identify shortages and instigate action to source ingredients.

  • Raise all supplier quality issues with the Procurement Department

  • To communicate with the relevant parties’ requirements for planned menus and order necessary ingredients

  • coordinate stock ordering and stocktaking for the entire operation.

  • Responsible for the full management of your team’s kitchen. to ensure your team are briefed every day, team meeting once a month.

  • Identifying your teams training and personal needs with personal development review

  • To ensuring that all standards of quality, food hygiene and health and safety is upheld to our food safety manual and legal requirements.

  • To work with our senior teams within CRS to deliver all budgetary targets and provides high standards of customer service.
