Our client, a premium private members club, is currently seeking an experienced and motivated Senior Sous Chef to support the leadership and smooth running of a high-performing kitchen. This is a key role within the brigade, ideal for a strong and steady chef who can lead by example, maintain exceptional food standards, and support the development of the wider kitchen team.

Key Details:
• Responsible for supervising and supporting the wider kitchen brigade
• Senior leadership role within the kitchen team
• Hands-on position ensuring high standards of food quality, organisation, and service
Responsibilities:
Kitchen Leadership
• Support the Head Chef in the daily management of the kitchen and brigade
• Lead the team during service and in the absence of the Head Chef
• Maintain a calm, organised, and professional kitchen environment
• Mentor and guide junior chefs, supporting their development and confidence
• Promote teamwork, respect, and strong communication across the kitchen
Kitchen Operations
• Ensure the kitchen operates smoothly on a daily basis
• Maintain agreed stock levels and kitchen organisation
• Check, sign for, and store all deliveries correctly
• Return any sub-standard goods with appropriate documentation
• Maintain correct food rotation and secure stock storage
• Monitor and record wastage to ensure efficient use of ingredients
• Ensure dishes are produced to specification with consistent portion control
• Oversee the preparation of team meals, ensuring they are nutritious and within budget
Food Quality & Service
• Support the Head Chef in developing seasonal menu items
• Ensure dishes are prepared and presented to the highest standards
• Maintain pace and consistency during busy service periods
• Ensure food is delivered in the correct sequence and timing
• Maintain strong communication with the Front of House team before, during, and after service
• Support the resolution of guest feedback or concerns relating to food
Purchasing & Stock Control
• Support purchasing and ordering processes alongside the Kitchen Manager
• Build and maintain strong relationships with suppliers
• Monitor stock levels and maintain accurate inventory control
• Assist with supplier negotiations to ensure best value and quality
• Maintain accurate records of goods ordered and received
Financial Management
• Support the Head Chef in monitoring food cost and achieving GP targets
• Ensure dishes follow correct specifications and portion control
• Assist with stock management and cost control
• Contribute to weekly and monthly financial reviews where required
Training & Team Development
• Train team members on dish specifications and kitchen standards
• Mentor junior chefs and support career development within the brigade
• Maintain a positive team culture built on respect, organisation, and learning
• Provide guidance and support for day-to-day team queries
• Communicate product knowledge, preparation methods, and ingredients to the Front of House team
Health & Safety
• Maintain the highest standards of food safety and hygiene
• Ensure compliance with all health and safety regulations
• Support the implementation and maintenance of HACCP systems
• Ensure safe use of equipment and kitchen facilities
• Maintain a clean, organised, and safe working environment at all times
Monthly Responsibilities
• Support the Head Chef and Kitchen Manager with monthly stock takes
• Assist with food safety, health and safety, and operational audits
• Review kitchen performance and identify areas for improvement
Salary - £45k + Tronc estimate £12k = £57k
